Wine is an integral part of the Greek legacy, customs and traditions, as well as nutrition. From 7000-6500 BC have been found the first elements that prove the use of grapes for the wine production. They come from Macedonia, from the land of the ancient Philippi, while many of the varieties we use today are likely to come from those which have been used by the ancient Greeks.

The commerce of Greek wines spread throughout the Mediterranean to the Iberian peninsula and the Black Sea and was one of the most important economic activities. In several cities there were special laws to ensure the quality of the wine. The residents of those cities blessed the god Apollo as their prostate.

Ancient Greeks were the ones who developed the art of winemaking, wine cultivation and wine trading at a high level and managed to raise wine from a simple drink to a global culture.

During antiquity there were many kinds of wine: white, red, rosé.

There are records for all the types of cultivation, starting from simple wines to the finest varieties. They were famous vineyards in many towns such as Naxos, Thasos, Lesvos and Chios.

Secondary wine was produced from water and must, mixed with sediments, which the villagers kept for their personal use. Sometimes the wine became sweeter with honey, and could be used for medicinal purposes if mixed with thyme, cinnamon and other herbs.

Wine was a daily basic ingredient in the diet of Ancient Greeks and was one of the main foods as it was part of the breakfast but also of the other meals. Hippocrates, the father of medicine describes the types and amount of wine that normal people need to drink and gives us, on his scripts, the healing properties for all kinds of wine that is consumed by humans.

Nowadays, Harvard Medical School studies have concluded that moderate wine consumption reduces the possibility of coronary artery disease by 20 to 40 percent because it increases HDL (good cholesterol) levels and reduces LDL (bad cholesterol). Its action is due to the strong antioxidant factors of red wine, and particularly to the phenols that absorbed by the bloodstream. These elements are found on the skin of the grapes.

An important element of the quality of the Greek wines is the proper utilization of the Greek vineyard, which combined with the geography of the country and the sweet Mediterranean climate, favored the creation of the small independent vineyards.

One of the main features of the Greek vineyard is the large number of micro-regions with a particular ecosystem (land – climate – vine variety) where wines of a qualitative character are produced.

In addition, the moderate fertility soils, often barren, give a good quality fruit. More specific, the vineyards are located in privileged locations, in coastal areas, on islands, on mountain slopes reaching altitudes of up to 1000 m. The vineyards are very few. Under these conditions, are cultivated the grape varieties. There are indigenous Greek varieties, many of which refer us to ancient Greece. There are totally over 300 precious native varieties in Greece and produce a whole range of wines. Each of them having its own personality and its highly formal character, “carries” the full weight of the geological history of its production site.

Sesame is considered to be one of the first plants that human used for his seeds and for seed products such as mashed seeds and sesame oil. Ancient Greeks named this oil “sesamon” and they used it as food and also for medicines production.

Hippocrates emphasizes its high dietary value, Galenos uses it as a medicine, and the Athenian, in the “Deipnosophistes”, considers it as one of the basic foods of the ancient Greeks. In addition, Aristophanes mentions one of the uses of sesame, that is known until today. Also, at the play “Vatrahomiomahies” is mentioned the sesame cheese, which is probably a mix of cheeses and tahini. Lastly, “sesamis” is a mix of sesame and honey( a kind of halvas) that was offered at the weddings, while “knikon” was produced from fresh milk and garnished with honey and sesame.

Sesame is used on the surface of bread, bakery products, for enrichment of flavor and aromatic reasons. In Greece, sesame seeds are well known as a basic ingredient of traditional products and sweets such as Thessaloniki bun, sesame -pie, laganas and pastels.

Ancient Greeks used honey from the very old times. Aristaios is the most ancient person in apiculture. According to the myth when he was born, was raised up eating nectar and ambrosia which made him immortal. This story proves the exist of apiculture in ancient Greece.

In Crete, during the excavations in Phaistos, were found inscriptions of Minoan age. There was a phrase in one of them <<Πάσι Θεοίς Μέλι>> which means « we offer to all the gods honey». These words were written in Linear B at 14o century B.C and has been translated from the British architect Michael Ventris at 1952.

Furthermore, in Odyssey, is mentioned a milk and honey combination. Lastly, the Aristotel’s collection is another proof that apiculture was an important sector in ancient Greece.

Greek honey outweighs the other types of honey with its incredible flavor and aroma. This is due to the Greek sun, to the land and to the uniqueness of Greek plant life. Only in Greece there are 1.300 endemic plants, an extremely excellent variety of herms and trees, that offers honey a unique quality and taste.

Honey is kept in a sealed package for years. We have to store it in a cool place, away from warm and sun. As the years passing, it can undergo some physical changes. It could Crystallizes, changes color and had more intense flavor. However, there aren’t any nutritional changes. Crystallization, is a normal phenomenon, is proving that the honey is pure without any processing and it has to do with the plant origin of honey. This is why they do not crystallized all of them neither at the same time. It depends on which main plant is used for honey synthesis. Honey can obtain a liquid form with medium warming without losing any of its biological properties.

Portokalia: light color, excellent aroma and flavor.

In the Ancient Greece the fig tree was sacred. Homer, talking about Odyssey, says that when he wanted to persuade his father, Laertis, that he was his son, he reminded him that he had received a gift with forty figs. The name of the tree comes from Titan Sikiea, whose mother Earth transformed him in a tree to save him from Jupiter’s anger. Furthermore, the first fig tree has germinated in Athens, after Dimitra’s command, the goodness of agriculture.

From the word fig, came up the word “Sikophantis” (sukophant). The meaning of the word is located in the Ancient Athens were the fig’s export was prohibited and whoever complained someone doing this, was paid and called Sikophantis. After a few years, this word took a negative meaning, because Greeks use it to blame whoever is lying.

Today, we know that the oldest figs was found in Minoan Crete, in a villa at Chania. It’s remarkable the fact that the figs has dried before they get burned so until now they provide us the way of drying out in Minoan Crete.

Fava Santorinis is one of the most traditional products of Greek nature and maybe the most ancient nutritional commodity in the Greek land. Its raw material varies depending on the place of manufacture. In Greece it is produced from the legume lathuri.

Lathuri is a type of fava. In Neolithic age, is cultivated in many Greek areas and especially in Santorini is consumed from the 2o century b.C . Its brand appears for the first time in Aeschylus’s manuscript at 6o century b.C as a humble food. The first identification of fava with the namesake food was done from the Greek doctor Dioskouridi at the 2o century b. C who mentioned fava as the bean’s name.

According to the myth, god Hermes had a friend whose name was “Crocus” and one day he injured him in his head. The blood went to a flower which was colored at three places. From here and then, called crocus. This flower, with the unique gifts, it is overtime used as a medicine, condiment and painting material.

The brand “Crocus” comes from the Greek word “Croci” which means thread. This word is known to us from the first manuscripts that appear in the whole world.

In the sense of plant, the word “Crocus” mentioned at Homer’s, Sophocles’, Aristophanes’ Hippocrates’ etc. scripts. It has cultivated in Greece at mid Minoan age. This opinion strengthened from a mural of the same age the “krokosillektis”(crocus collector). This mural shows a young person who is gathering crocus flowers in a basket. Lastly, Greeks are occupying with crocus planting from the Hellenistic period and at the age of great Alexander this flower was spread on the East.

Today, crocus is known as Crocus sativus or saffron and is one of the most infrequent pharmaceutical, eatable plants.

The red Greek saffron, Crocus Sativus Cartwrightianus, is considered the king of spices. Its excellent quality is worldwide superior and is cultivated only in the area of Kozani since the 17th century AD. where the cultivation process, the climatic and soil conditions of the area, as well as the special knowledge for the cultivation of the plant, contribute to its excellent quality and its special characteristics. These are the high coloring power, intense, characteristic aroma and spicy flavor.

The processing is done by hand and is needed 150,000 flowers to produce 1 kilogram of dry fringe or 90.000 workers’ bends to collect these flowers. Its expensive price (considered the most expensive spice in the world) is offset by the minimum quantity that used each time.

Olive is the tree that the Greeks worshiped since antiquity. According to Greek Mythology, the Goddess Athena donated to the Athenians the first olive tree in the world, which grew up where she struck her spear during the struggle between the gods to promote the protector of Athens.

In the Olympic Games that began in 776 BC, the ancient Greeks crowned the winners with the “kοtino” made of olive branches from the same wild olive tree, a source of inspiration for the modern Olympic Games.

After the excavations at the Methana, the oldest olive press in Greece (dated 4000 BC), we learn that the use of olive oil has been known since these years, Also, the excavations in Knossos, brought to light earthenware lamps that burned oil, during the Early Minoan era (before 3000 BC).

Ancient Greeks attributed their physical strength and spiritual wellbeing to the consumption of olive oil and according to Hippocrates, the father of medicine, olive oil was considered beneficial for more than 60 therapeutic uses, calling it “Grand Therapist”.

Nowadays, we know that olive oil contains high levels of monounsaturated fatty acids as well as a wealth of bioactive ingredients. Some of these are the phenolic components which are the most studied. Regarding the benefits of monounsaturated fatty acids to human health, the American Food and Drink Agency (FDA) has licensed high quality health claims , for the first time in 2004. This concerned the protection offered by monounsaturated fatty acids in olive oil against the risk of cardiovascular disease.

The olive oil is more than a rich monounsaturated fatty acids source. Its phenolic ingredients have shown anti-inflammatory and chemo-protective properties. The oleocanthal of olive oil has been found to have a similar effect with the ibunoprofen anti-inflammatory medicine.
